This humble, unicellular fungal organism, also known as "bakers yeast" and "brewers yeast" has been the companion of civilized humans since prehistory. Through the process of fermentation, this miraculous microbe has given civilization bread, beer, wine, and many other beverages and edibles. In the modern era, S. cerivaceae has become invaluable to biologists, who use it as a "model organism" in the study of a wide range of subjects.

Our yeast locket shows S. cerevisiae in what is known as the "shmoo" phase of cell division (mitosis), with the daughter cell partway through the process of budding off of its parent. On the parent cell, you can see the scars of past budding events, and even the faint outline of the scar left over from the parent's own "birth".

If ever a single cell could be said to look cute, then it is surely this... but its lovely exterior is only the first of this cell's many charms!  Our little S. cerevisiae opens up by means of a cleverly concealed hinge, to reveal a wealth of biological information.
